A Visit with my Dad

Beautiful Sea Shells!

Last week I visited my Dad in Florida.  It had been a while since I’ve seen him and I just wanted to spend some time together catching up.  It’s also nice to escape the cold of a northwest winter for a few days in the warm sunshine.  And just check out those pretty shells that I found on the shoreline!

While I was in Florida, I decided to make a few pies.  One was for my Dad’s girlfriend Eileen, and one was for her daughter Joanne who’d just had her third baby.   And while making pies is relatively easy for me, I found it a bit of a challenge because my Dad didn’t have a rolling-pin or a pastry cloth.   I searched the fridge and cupboards and found something that worked out just fine: a cold bottle of wine and a large Ziploc bag.  Perfect!

Once I had the pies made, we first delivered one to Eileen…  and then we visited  Joanne’s family and met their new baby, Bryson.  I even got to sit and hold him for a while… which was just delightful!

I came home late Thursday, and spent many hours (13+) in planes and airports (likely because I had used a mileage award ticket for this trip) and it took a day or two to feel like myself again.

Once I was “back to normal” (normal for me that is) I got busy making another pie.  I had recently been given an apple peeler/corer by my friend Caroline and pulled it out today.  It works great!  And to think I didn’t have this help last year when I was making a pie a day… just think of the time I might have saved!

Early this afternoon, I delivered this pie to a friend who has family visiting.  I knew she wouldn’t be able to cook for them and I wanted her to have something homemade to offer them.  After all,  what could be better than sharing yummy food with people you love?

Day 141: New Grandparents – Ellen and Owen

Today my next-door neighbors drove to the town where their daughter lives to be there when she gives birth to their first grandchild. This couple has just built on an addition to their house so that when the daughter comes to visit, there will be a room for the new baby. I love how my neighbors are so excited about their grandchild!

In the next few days they will be standing by waiting to do whatever is needed – even if that means that they will just be waiting, wondering who this new child will be. I can’t help but think that this will be a very lucky (and loved) baby indeed.

As they prepared to leave on their journey I gave my neighbors a pie to bring to their daughter and son-in-law. I wanted to be a part of the welcoming committee – and so I sent an Apple Walnut pie to help them keep up their strength during their “waiting” vigil. I wish their daughter a speedy delivery and send my very best wishes to the entire family.

Day 118: New Life

As I mentioned yesterday, I wanted to bring a pie to some friends that have recently become grandparents. Their new grand baby has spent the last two months at the hospital due to health issues. With time spent at work and lots of time spent at the hospital, this couple has not had the chance to cook a meal at home in quite a while.

I thought of my friends as I made a quiche for them today. They are being tremendously supportive of their child and will be very involved in the care of their grandchild. While they might not have foreseen this event, they are willingly assuming responsibility for this new baby.

Sometimes life surprises us with situations and we have to make a decision on how to proceed – without any clear blueprint to follow. It seems to me that my friends have made the decision to do all that they can for their grandchild. I am proud to know them and have offered to help them with meals should they need it.

Tonight a Quiche Lorraine (and some brownies) went home to my friend’s house. I hope that the quiche gives he and his wife the nourishment that they need and also gives them the knowledge that they are loved.

Day 110: A Brand New Baby and Polenta Pie

As you may recall, I catered a wedding this weekend. And as I have not been on top of my game (which I guess is because I am recovering from my accident), I prepared more food than I should have. I was trying to decide who to give food to when my friend Sue called and told me about a young couple who have just had their first baby.  It seems that the mother had a difficult time during childbirth and is now recuperating.   Many of their friends have mobilized to prepare meals for them so as to make this trying time a little bit easier.

When I asked Sue if she wanted some of the food that I had left, she told me, “I would love to take some of the food but only if it would be okay to share it with this young couple.”  Why wouldn’t I want Sue to share this food? It seemed like a perfect solution.

Once I determined that this couple would eat the sausages I’d cooked, I put together a “Polenta Pie” for them.  I started with a layer of polenta, added a layer of sausage and peppers, and topped it off with roasted tomatoes, marinated mozzarella, grated asiago,  and fresh spinach.  It was one of the prettiest pies I think I have made.

I send my very best wishes to the new parents and their brand new baby and hope that the new Mom recovers quickly.
